Erbaluce di Caluso Passito Wine or Caluso Passito Wine

Definition
Erbaluce di Caluso Passito Wine or Caluso Passito Wine is obtained with dried Erbaluce grapes. It is a luxury wine having the following features:

Vine: Erbaluce. Color: from golden yellow to dark amber. Limpidity: bright. Scent: ethereal, delicate, characteristic. Taste: sweet, delicate, balanced, full-bodied, velvety. Serve at 16-20 °C. As aperitif, serve cool at 8-10°. Minimum alcohol content: 13.5%. Minimum ageing: 4 years from the first November after the grape harvest. Match: perfect with sweets, above all pies, zabaglione, and dry pastries.

Caluso passito is obtained from Erbaluce grapes, eventually adding local Bonarda (maximum 5%), after a drying process lasting until the first February after the grape harvest. It is the result of the vinification of accurately selected sound bunches of grapes undergoing a natural drying process by hanging or placing them on wooden hurdles in order to favor the evaporation of the water contained in the grape and the consequent concentration of sugars. Caluso passito must be aged for at least 4 years, 5 years to become "Vintage".

  • Production Area: Caluso passito wine is produced with grapes cultivated in a specific wine-growing area between Canavese, Biellese, and Vercellese. Among the Municipalities of Po Torinese Park there are Mazzè and Villareggia.

  • Legislative Protection: Erbaluce di Caluso passito is a DOC wine (Controlled Designation of Origin).
